dialing in fuel pressure with Giac PC16

Car is 1.8T AEB with K04 turbo, FMIC, Giac PC16 with the required injectors, 3" downpipe, cat back exhaust, stock intake with K&N cone. AFPR.
Car had a single misfire ‘fart’ every now and then when downshifting.
Spliced in fuel pressure gauge. Was set to about 2.5 bar.
Nominal for the tune is 3.0 bar, but most run at 2.7 to 2.8 bar.
Set fuel pressure to 2.8 bar (ca. 40 psi) at idle.
During driving, fuel pressure is around 50 psi at zero boost/vacuum, and climbs to 65 psi at 15 psi boost.
With 40 psi, initial test driving shows some hesitation/unsmoothness in mid RPM range.
What is the best way to dial in the right fuel pressure? Aside from wideband O2 which I don't have access to.
