What are the cons of "knocking the guts out" of the catalytic converter

I had my 1.8t rebuilt and as I am putting everything back together, I am thinking about knocking the guts out of the converter. I am curious if it will have any adverse effects on the engine, more specifically the O2 sensors.

depending on the engine (AEB, ATW, etc) you may or may not get a CEL from the rear O2 sensor. You will have to use nonfoulers on the rear sensor.
The front sensor monitors the A/F ratio, the rear sensor does cat efficiency.
Gutting the cat or using a test pipe will not harm the engine.

non fouler are extensions for the sensors that will move it out of the airstream. The AEB works well with non foulers.
