Can I just unplug my ECT Sensor and drive it

need to just get to the dealership to buy the part and am worried of getting stuck in an intersection again!! Anyone know if this would work since it is held by a retention clip???

The default with no signal from the ECT is typically to use a fixed temperature usually 80 C. Although some systems may use a more elaborate default methodology starting with a fixed temperature and then adding a couple of degrees per each minute of operation.
You may have stalling and initial poor running but from a lean condition. There are a lot of other systems that depend on the ECT so fixing it should be a priority.

when the engine is first started, and then adds 18 F per minute of operation until the temperature reaches 185 F.
