Default Well,

When I had a similar problem on my 1998.5 2.8 thats what the dealership changed. IIRC (Kris, frog, etc please confirm) If the coolant temp sensor reads cold when its not, the car will run rich at part throttle.

Default That actually makes the most sense, cause......

I looked at the plugs and compared them to the "Common spark plug conditions" in the back of the Haynes Manual, and its really hard to tell, but if i had to guess, i'd say they look like the picture "TOO HOT" Recommendation: "..lean fuel mixture.."

How much do they wack you for the Sensor?

Default unlikley

THe coolant sensor being off will make the car run richer, it doesn't lean it out.

Kris is probably on the right track, wires might look fine, they might even test fine with a multimeter, but when underhood they can do strange things.
