On the contrary, Quattro makes it damn near impossible to pooch a lauch, if you're halfway good at it. You should get excellent launches with Q... far better than with 2 wheels.
ESP, (if you have it) can be turned off with a button on your dash. Quattro is purely mechanical and cannot be "turned off".

first off you might want to trade the car in for a fwd car... that way you dont have the rear wheels moving.... now... the Quattro system is a push pull configuration... which basically means..
while your front tires are pulling your car.. your rear tires are pushing along the weight. with a fwd car... you have to wait for the rear of the car to catch up with you... which induces.. class can we all say it? "Understeer"
do you know what happens when the rear tries to catch up with the front... "Oversteer"
