After about 15 minutes of lapping and engine temp at 250, my motor has a pretty loud clicking (bww)

which goes away after cooling down to normal operating temperature. It does not sound like the normal valve clicking.

VI (viscosity index) is 165 and your flash point is 445. Both numbers are good; 165 being in the high range (very good) and 445 being about midway (still good). BUT... you had a reading of 250 which worries me. A side note: the stock gauges are not always the best (most accurate) and there is a possibility that an accurate reading might have shown a hotter number. Still, 250 is hot.
Considerations:
When was the oil last changed?
How hard has the car been driven since the last change?
Is the oil filter damaged/clogged/old?
Is the oil level low?
Eliminate these issues first, then I'd do a VAG for any possible codes (doubtful).
Lastly, I'd go in for an engine pressure/vacuum check (pricey) to see if you've got other/larger issues.
My guess is that it's the oil, though.
BTW: Don't ever use oil additives with synthetics. They have all that is necessary and additional additives may reduce their VI and flash or simply breakdown the synthetic's polymers.

checking the oil, as I stated below, are the first places to look, because running 250 after only a couple of runs is pretty hot.

I assume that's OIL temp? You're pushing the upper temp limit, from Porsche 911 experience. Back it down!
I seem to remember using an oil additive on old Audi Coupe to quiet noisy valve lifters. Think it was Alemite CD2. Worked wonders; sold car at 120K miles and kept in contact with next owner who never complained out to 160+K miles. Don't know if it'll help your superhot lifter condition, but it's an idea.

then I'd consider the oil cooler option. It is FLA and you guys got heat AND humidity issues.
BTW: Isn't 31psi a bit high? I know of max psi's around 21-24psi but never 31.
