Default is anyone having slight problems

shifting into second gear when the tep. is below 25? Also it only happens when the trany is cold, once its warm, no problems

Default Yup...normal...

The fluid needs to warm up. Until then, you'll feel that second gear crunch. Happened on every manual car I have owned. There are two things you can do (I recommend them both) to alleviate the situation.

1. Switch to a synthetic manual tranny fluid (I've used redline on my old acura).

2. Double clutch into second gear. Goes as follows.

*in Gear 1*
clutch in
shift to N
clutch out
clutch in
shift to Gear 2
clutch out

If you pace the shift right, you'll eliminate most of the crunch. If you're too quick, you'll feel a bit of crunch. Do it a few times, and you'll get the hang of it.

Easy does it when its 25 and below. Double clutch and shift out of first at about 5mph in to 2nd (double clutch) repeat the process until u have driven 10 or so miles or until the shifting feels/gets better.

Default Evidently you guys live on cold places so....

do u guys have any problems with fish taling on stop and go on snow? with quattro?
I have a 1.8t quattro manual.
brand new tires, 5k on it, 205 55 16 h all weather!

Default Double clutch or...

I just let the shifter find the neutral point, before shifting into second first thing in the morning. Exactly what RKA said except the double clutch, and most of the time it alleviates all of the crunch.
