take out the rear seats and seat backs, spare tire...
get race seats, CF hood, trunk, fenders...light weight wheels, etc..
do you want it daily driveable? Permanent weight loss or for track events?
I think the rear seats and spare would be quickest/easiest/cheapest...iirc there is a tech article on removing the rear seats.
If you REALLY want to strip the car..off come the interior panels, passenger seat all together, floorboards

aftermarket seats will help a little but the mounting brackets are heavy
in addition to what has already been listed ..
get a cf hood, a smaller/lighter battery. toss the factory jack.
you'll shave off ~200lbs or so.
