can you replace the oem b5 1.8t clutch with a b5 s4 or even rs4 clutch kit? do they fit the same or

You need a custom flywheel, but the answer is yes.

I hated the engage/release point on the stock clutch.
The RA4 Stage 2 is better. It's a whole lot firmer, but I got used to it and I don't have to worry about if it'll hold or not.
