when I turn the steering wheel more than half way, it starts to like bind or make a crunching noise, it kind of sounds like it rubbing against something but its not. The noise can only be heard from the inside and not at all from the outside, any ideas?

most likely both.... since it happens when I turn either left or right, so I dont need the whole shaft, just the joint itself? Also, how can I be sure its the CV joints or does my description give it away and are CV joints and fairly easy DIY or are special tools needed?

If you can't hear it outside then it's NOT the CV's! **see post below, WTF??** Inside about the only thing that can cause that is the "clock spring" behind the steering wheel or maybe the turn signal return/shut off catch.
Simple thing to check is to be sure nothing is catching/wrapping around the steering column under the dash. Pull the kick panel above your pedals/feet and look around for anything like a wire harness catching on anything.
