how much coolant do our cars hold? should we change it from time to time?

the 1.8T needs almost 2 gallons of coolant? I'm not sure. I know it needs less than my 2.8.
Anyway, the coolant needs to be changed each time any metal part like waterpump, cylinder head, or any other major metal part is replaced. The reason is that the corrosion inhibitors coat all metal parts, and old coolant will not have enough additives to properly protect a new metal part.
Furthermore, coolant needs to be changed if it doesn't look clean, or if it has changed its color.
If demineralized water is used to mix coolant concentrate, I wouldn't worry aboput the longevity of the coolant too much. Just get a coolant tester (a few bucks), and make sure that the coolant is still providing protection from freezing. Chances are you will need a new waterpump at some point, and then you will get new coolant anyway.
