If I get into replacing the clutch, what else should be changed at the same time outside the plate?

Default Pressure Plate, Clutch, Throwout bearing... also have the flywheel surface checked out to see if...
it needs to be resurfaced.

Default ive been told its a good idea to always...
resurface it / replace it when you get the clutch replaced. is that true?

Engine rear oil seal and trans input shaft seal.
