Default normal driving temperature of my engine is 240 degrees F is that normal?

also i think i know why it is running so hot....i found out why my check engine light was on....the cat was plugged and yesterday it broke the flanges where the cat hooks up to the manifold....so im out of service for a few days.....that would make it run hotter right....

100+ degrees + AC full blast + 20lbs of boost, 235-240 is not uncommon

no way. 20lbs of boost on a 95F day, I NEVER see over 90C coolant temps.

Default Sounds a bit on the high side.

I used to see around 210-220 just around town. Easily could hit 250 on a hot day with aggressive driving.

New oil cooler has be pretty steady around 180-190 around town, and hasn't hit over 220 even on a 95F track day.

hmm... I don't think my x chip had 20 lbs of boost, but I never went above 200F in those conditions.
