Its' not uncommon for 2.8s to drink a little oil.. anything under a quart every 1000 miles is within
Audi 'spec' supposedly. None of my cars use that much, and they both leak a little.

You sure it's not leaking?
Check to see if oil is burning up on your manifold (it'll look slightly damp) My 2.8 has a gasket problem I'm working on fixing. I don't notice a large consumption of oil though.

'Low Friction Piston Rings' = Oil Consumption
My old 2.8 used quite a bit of oil two quarts every 3000 Miles. No oil burning (smoke or residue in exhaust)
At the time I was running 5/30 - Interestingly I switched to Valvoline Max Life 20/50 and the oil consumption stopped.
Try running a heavier grade oil.
