Only suggestion would be to use a Pitney-Bowes machine @ your work and back date it.
Also, is hand-delivery an option?

If it's not and the check is enroute then call them asap and nicely ask for the court date to be postponed(just pretend u're entering a non guilty plea). So the due date is now postponed and when they get the check they'll figure out u just admitted guilt =) Of course if the due date has already past then u're SOL.

...not only will most courts dramatically increase your fine, in some jurisdictions you'll do jail time. Plus they notify the Postal Inspectors and, yes, they will routinely file for additional federal fines. The courts react VERY harshly to this sort of fraud. It doesn't even work with bills.
How will they know? The USPS sprays a time/date code on the back when it's cancelled. Sometimes the letter will be clearly marked on front when it was actually cancelled. Not only does the court go by that but now you may get a subpoena to answer further questions.
Plus, they'll notify Pitney Bowes, who'll notify your employer, who may then terminate your employment. It ends up being like a bad movie where the kid just "borrows" some money from the cash register (yeah, I'll pay it back later) and then ends up on death row.
