Because your EFK is wired to come on when the AC fan comes on...
Mine also has a thermostat that will switch it on when it gets too hot. Go to any auto parts store and ask for an adjustable thermostatic switch. IMHO, 1 notch past the middle is not running hot, running hot is when it is all the way to the right and the warning light comes on. I drive in 100 deg + weather most of the summer and when I really push it hard (I have 65 mile commute, mostly interstate), the temps will creep up.

When your temp is 1 bar over, are both fans running?
I don't know anything about EFK's, but this is something to consider. No matter what temp switch you have, as soon as it gets a hair over halfway, both fans should be running.

Overheating Issue (Problem Solved)
Thanks for everyones help, the problem was a bad fan switch and after we replaced it the fans kicked on like clock work. Both speeds low & high and 12.00 later Im very pleased.
I know some of you were saying its ok to run 1 bar over the normal temp on hot days but my car never ran hot before so you may want to check you fan switch its an easy replacement and piece of mind.
