When I engage into gears, there is a notable Clunk sound I hear coming from under the car. At first I thought it might have something to do with the CV, however I am wondering if it might be something with the clutch.
I have about 110k miles on my 01 1.8t, not sure what the average life span of the OEM clutch is...

Drop into 5th going around 45mph give full throttle. If the clutch is going bad it will slip.. You should be able to tell a noticeable gain in RPM without a gain in speed.
Clunking could be transmission oriented. Try the above first.

under any heavy load from the engine it should slip. At any point the load is applied to the clutch for that matter. 5th just gives you a clear idea if its slipping. Doesn't matter if it slips early or later, if it slips, its time for a new one.

No, it sounds more like its coming from under the driver side actually. The sound happens under an initial load on the tranny. Im concerned to find the root of that problem
