that garganto filter a B5'er posted and a secondary oil cooler should aid in keeping the oil temps down and keeping the oil at a safe operating temp.

The problem I have is high COOLANT temps. I rarely see oil temps over 250F, so that's a non issue.
Clearly the car has a problem with the cooling system. It did not always do this. It is a 1997 model with original radiator and hoses. I've pulled the radiator before and flushed it, and a fair amount of pink scale has come out. I'm sure it's way down on efficency now that it's 8 years old. Everything else has been changed at least once over the years.
I'd still feel better knowing the thermostat was keeping the car running a tad cooler under high loads.

but the cooling system should be able to compensate and maintain the temp at the level the thermostat dictates. If you're still running hotter, and your cooling system is working properly, then you're exceeding the capacity of your cooling system, in which case I would argue that it won't matter if you put an 80 degree tstat in, or a 40 degree tstat in...your cooling system is basically being overloaded.
The key there is obviously "if your cooling system is working properly". If it's not, you're essentially running the engine cooler 95% of the time so that you'll be at proper temps the 5% of the time you're driving aggressively. It's ultimately a band aid approach to keep the car from running too hot.
