those with CO's how many times do you adjust the ride height?

Just because you can adjust your C/O's does not mean that you must.
The benefit of a Coilover set-up comes from the fact that engineers carefully matched the springs and shocks to provide a well-balanced sporty ride.
Unless you drive in snow or on the track, you have very little reason to adjust your ride height.
I believe that the more valuable feature of coilovers comes from adjustable dampening. This allows you to fine-tune your suspension to your comfort level and to tighten-up the dampening as the valves on the shocks wear.
