Christian has some good ideas - you do have a strange situation.
Keep track of how fast you have to add oil and how much. If you were burning it - I would definitely expect to see smoke.

coolant is fine, perfectly green. there is probably 1-2 quarts of oil in it, after having it full..
just a month ago! reason it alarmed me today is because my oil light flashed again.

Well, it has to be going somewhere. For it to burn that much oil, you would see smoke, no question.
For it to leak that much in that short of a time you would see drips. Are you absolutely sure that the garage put the right amount of oil in? the 2.8 takes over 5 qts of oil..

FYI, your coolant should not be green. You need G12 coolant which is pink in color. Green is no good for Audis and Volkswagens!
