Default water temp gauge not working right

Within the past week, my water temp gauge randomly works when it feels like it. I first noticed the other day on my way home from work. I had been driving for at least 1/2 hour, so the car was definitely warmed up, but the gauge hadn't moved from "C". Then I look again, and it's right in the middle where it normally runs. A few minutes later, it dropped back down to "C". You get the point. Is it the coolant temperature sensor behind the block that sends the info to the gauge? I checked the connection, it seems to be connected well. Do I need to replace this?

2nd. 10 minute job on 1.8T...20-30 on a 2.8 (unless you've got tiny hands)

Do it on a cold engine, or it becomes a 45 minute job waiting for it to cool
