what happens if i run 87 octane gas with a apr chip?

Your engine will knock, ecu will pull timing and the car will perform poorly.
On the more extreme end of things, you could destroy the engine.
You can run 87 in case of an emergency (run out of gas, whatever) but don't get into boost.

you will pull timing some, and depending on the heat you will get some pinging
if it's really cold, it will probably have very little correction, if it's like 60s and 70s it will pull timing. Even 91 will pull timing to some degree in those temperatures.
Don't go ***** out on the WOT and you will be fine, but don't make a habit of this.

for example if it is 40s and 50s out people have successfully ran 100 program on 91 gas
for Stage III with a FMIC. Mark Bradford did this on his old car.. as long as it stayed that cold he could run 91 gas on the 100 program, which gave him a lot of advance.
Not sure how dialed in your ride is, and unless you have a VAG, some sort of MBC/EBC in tandem to control things I would stay away from the wrong grade of fuel.
