whats better more torque/less HP or less torque/more HP ?
i read the european speed comment on why they pick the AMS chip.......so what is better and what chip makes it....or am i better off stepping up to get the AWE K04 upgrade ?

Torque is what your engine produces, period.
Horsepower is a calculation based on torque and RPM.
I think your question is more along the lines of:
Is it better to have a lot of midrange torque or to have a lower peak/straight torque profile to high RPM?
For example a chipped only 1.8T can deliver 240+ lb/ft of torque at 3500 RPM but the torque drops way off by 6000 RPM resulting in a HP rating of about 200 HP. An S2000 delivers only 130+ lb/ft of torque but does so to maybe 10000 RPM resulting in a HP rating of about 200 HP. Which is a better engine to drive?
