The only issue is that if you're really low, if you have to put the adaptor on the car first, then slide the jack under. But, a race jack will solve that, which I believe you already have.

Just looking at it I don't think I'll have enough clearance, but maybe I'll try it

clearance shouldn't be an issue with a race jack.
