Stock, there's 3.5" from tire to the side of the guard at the rear; 2.5" at the front. Should i keep the same proportion and lower rear and front by 2"?

once the car is moving, the rear will drop a little more with the weight transfer. If you lower the front and back so they are even while sitting still the rear will be lower then the front while your driving.
With stiff springs I find the rear drops about 1/2" with the weight transfer.

It does slightly depend. If you're looking for an all out performance setup using coilovers, you'll want to corner balance the car.
Corner balancing will assure that the weight of the car is even front to back, and left to right. Using this method, the ride height will not necessarily maintain the same proportions as stock.
You're always free to adjust the proportions depending on your driving style or your tastes.
