Why doesn't Audi offer leather in the 1.8T

It seems Audi decided that if you want leather, then you're a luxury-minded kinda person who'll also want the V6, wood dash and power seats. And if you choke on the price of those features, well, you don't deserve to have leather in the first place.
Reminds me of that scene in "L.A. Story" where Steve Martin is being "interviewed" by Patrick Stewart, playing the maitre d' at that "exclusive" restaurant. "You may not have the duck! You may have the chicken!"
Seriously tho, it's just one of the ways Audi distinguishes the 1.8 from the 2.8 (and now the 3.0). It's about more than just the engines.

I haven't installed aftermarket leather, but a few people here have. I seem to recall someone saying that you could get it for in the range of $1,200, which is about what Audi charges for the leather option. But don't think of it as spending $1,200. Think of it as saving $5,000!
