Will 245-40-18 on 18x8.5 rims fit on B5.

Depends on offset, but it'll most likely rub if you don't roll fenders...
and may possibly require spacers as well. 235/40/18 is already pushing it, and 245/40/18 increases the overall diameter even more. 245/35/18 would have been more appropriate, if such size existed (not sure if it does). But possible rubbing issues nevertheless.
A lot of factors to consider.. type of suspension, whether quattro or FWD, offset, and even the particular tire model as their dimensions vary slightly, even if they're all the same size.
