My 03 1.8 is due for its 100K and I wanted to find out what service is completed by the dealership? I am currently jobless and wanted to try and save a few bucks doing it myself. Any advice?

Typically, "service" only means change some fluids (oil, coolant, sometimes brake), replace spark plugs, download the codes, and inspect for leaks, worn pads etc. You pay a lot of money for them to do basic service and look over your car. If you have this done by someone other than a dealer, make sure they use the correct fluids.
On Audis, one maintenance item they might suggest (if you haven't done it already, you should) is the timing belt, water pump, and tensioner.

There's a chart located here:

Just follow the link to your model year (2003) to get an idea of what the dealer would cover. 100k is a bigger one (but not as big as say, 80k).
