Say I want to upgrade the fronts to Stoptechs...Can I simply move the stock front brake assembly (rotors, calipers, etc.) to the rear? Stock rears are so puny! Is this done regularly?

.
for several reasons, such as
front-to-rear brake bias would move strongly toward the rear -- very bad
the front calipers lack an emergency brake
if you would upgrade the rear, the front calipers generally make a poor choice
