Help with strange overheating/ low coolant level light with coolant in reservoir

Driving into work this morning ('02 1.8t) about 1 mile onto the highway I get a low coolant warning and notice my temp gauge pinned to "H", immediately pull over and check under the hood, coolant level is fine, no leaks of any sort. So I wait for the engine to cool down before I try to limp of the busy highway. Within 15 minutes the engine cooled enough where I could take a double check of that coolant level - my reservoir is a dark grey so wanted to make sure, All fine.
So I drive to the exit ramp expecting the same thing to happen, and to my surprise it was fine, I drove it to my house and not one issue the temp needle was perfect and no low coolant light coolant. About a month ago I changed the green coolant temp sensor because my car sounded like a leaf blower but up till now the temp gauge and fan have been fine, Any suggestions on this? Could it have been a stuck T-stat?
