How hard is it to replace spark plugs? I've never done it before and...
...am thinking of doing it myself. Is there a tech article on this anywhere for the 1.8T?

It's easy, provided you have the required tools.
You will need an accurate torque wrench with 22 ft*lb capacity, (a 3/8" drive TW should work, try and have the scale at 20-30 ft*lbs cover the mid scale range) a 5/8" spark plug socket and a 3/8" ratchet and 6" extension. Disconnect the coilpack harness connectors, remove the coilpack by pulling straight up out of the Valve Cover. Vacuum or blow any dirt out of the spark plug hole before removing the plugs. The plugs must be able to be spun down to the gasket with finger torque only. Spray the threads with some WD 40 to insure that. Then, with the torque wrench, tighten the plugs using steady torque on the wrench, to 20-22 ft*lbs. Use a little bit of silicone dielectric grease inside the coilpack/spark plug boot. Reinstall coilpacks.

article somehwere but here's the gist
1. remove the engine cover. 3 plastic screws, turn 1/2 a turn counter clockwise.
2. i use a scredriver to loosen the coilpack slightly, then pull it up midway. pull the tab connecting the egnitor (for lack of a better word) to the coilpack and separate the 2. pull coil pack completely off exposing the sparkplug
WARNING! DO NOT DROP ANYTHING INTO THE SPARKPLUG AREA OTHER THAN THE CORRECT TOOL AND/OR A SPARKPLUG
3. forgot what size socket, but if you have the new sparkplug, make sure the socket fits it. anyway, counter clockwise turn on the sparkplug till it's loose. i use a mini claw to grab it from the hole since my socket doest not grab it
WARNING! DO NOT DROP ANYTHING INTO THE ENGINE OR YOUR *** IS SORRY
4. drop new sparkplug into the hole (thread down of course), and then hand tighten for a few turns. HAND TIGHTEN BECAUSE YOU DON'T WANT TO STRIP THE HEAD. You can then tighten with the wrench as soon as your sparkplug is going in easily. DO NOT OVER TIGHTEN.
5. push the coilpack in half way and then connect the ignitor cable (again for lack of a better word), back onto the coilpack.
6. Do it again for the remaining sparkplugs
