Default Instrument Cluster/Tripometer
Is there a way to program the instrument cluster to show things other than avg speed, avg mpg, distance to empty, timer, etc?

Default It's more involved than that. The software in the cluster simple isn't there to handle other inputs
Hence the need for an additional piece of electronics to handle that functionality.
