Can anyone recommend Protectants & Conditioners to use on the Leatherette seats? They're not exactly leather so I'm not sure whether it would be ok to use regular Leather Cleaner/Conditioner....

Both are fairly mild on leather and leatherette surfaces, and should do the job. Normally, leatherette is less sensitive to chemicals than leather is, so using a leather conditioner should not be a problem.
Like any surface, even "plastic" needs to be conditioned to prevent damage from the harmful effects of UV rays and dry/humid cycles over time.

Actually the parts your rear and back rest on are leather... the rest is synthetic leather. The new leathers are more durable but you should still use a good conditioner/cleaner on them. The rest can be wiped off with a damp cloth. I use 303 Aerospace Protectant and it makes my interior look plush! http://www.premiumautocare.com/303aerprot.html

My favorite detail shop (emmons coachworks dot com) says that they don't use Vinylex anymore because of that reason. They used to use it and sell it. Now they recommend 303 protectant. I use that now. It doesn't make for much shine, but just a nice black rich finish. I will use it on internal plastics when it is needed.
I used to LOVE vinylex.
