I drive 6 months per year on snow and ice (cold region of Canada) and my quattro system never behaves like you describe, so it is definitely not normal. There is a problem, we just need to find it. I do think this sounds like a misfire, so if your plugs are fine, check the coils.
Well, I replaced the plugs about a month and a half ago when I did the timing belt but that's also when I started noticing this condition. hhmmm...
I might have to pull them out and take a look. A cracked insulator could cause it to fire early, which makes some sense.

Shouldn't a misfire throw a code though? I haven't seen any misfire codes after I changed the fuel filter.

It won't necessarily throw a code until it reaches a certain point. Often, people report "feeling" a coil go bad before it goes bad enough to throw a code. I think it would be a good idea to pull those plugs and check them. Check the gap too. Do you still have your old plugs too? Maybe you could try swapping them.

Well, I replaced the plugs yesterday with brand new double platinum Autolites. Car seems to run a little bit smoother but no slick roads at the moment to test it out on.

I've noticed that the car has very little power between 1000 and 2000 rpm. Is this normal on the 3.0? After I hit about 2k, it seems to really take off. I've only driven 1 other 3.0 but don't remember noticing this.

Keep us up on the situation.

As far as little power at 1000 to 2000 rpm, horsepower and torque are just coming on at about 2000 rpm, so I wouldn't expect it to feel strong. Of course, I don't have a 3.0, so maybe some others have a better feel for the Audi engine. I have 2 other cars with 3.0 and 3.2 liter V6's and keep the RPMs 2000+ if I want to accelerate.

Small Update:

Last weekend, my belly pan got loose and I ended up taking what was left of it off. I'm waiting on a replacement piece. I don't see any way how this could be related but thought I'd post it.

Drove the car in the snow today with no problems. I didn't drive it very long but I plan on driving it out of town this weekend so I'm hoping to have a better idea of its behaviour at that time.

Another update:

I drove the car long distance today in bad weather and it drove great. No signs of the jerking (hope it stays that way)

On a side note, the car handled amazing!!!!
I was driving on pure ice with bald tires and was passing SUVs and trucks left and right. The Audi really impressed me. It held its grip through it all. I was not afraid to drive 60-65mph on icy roads, it felt solid.
