Default does it include a timing belt, a serpentine belt, a thermostat, a water pump, a tensioner, and a ...

tensioner pulley?

no thermostat on the B6, that's separate ($100)

Default so looking at those prices leads me to realize replacing the timing belt is only so expensive...

because it is obviously labor intensive.

4-5hrs is about right for a 1.8T, anything more and I'd look elsewhere

assuming 3.0 takes the same time... my dealer would get 440-550 for labor alone

Default I spread the work over 2 days but...

My regular work is about as far from mechanical work as you can get. I started on a Friday afternoon and took my time. I finished up on Saturday. My only problem was when I stripped the tensioner pulley nut and damaged the threads on the stud. I had to ride the Buell to the autoshop to get a die to repair the threads on the stud and buy a new nut. Everything else went ok.
Also, I don't think the dealership would do the water pump, serpentine belt, etc.. replacement unless you asked them to.

Default I would've considered DIY, but...

my friend just replaced the timing belt on his GTI and the belt slipped or something and his car was rendered useless. He just had to buy a new car.
