With ET30, you run more of a risk of the tires rubbing on the outside of the fenders (especially if you're lowered). ET35 places the wheels/tires more in the center of the wheel wells, with less risk of rubbing.

As the offset decreases;i.e, 38mm --> 35mm --> 31mm,..., the wheel is being pushed outward toward the fender (so issues with rubbing or not being able to lower it can occur). This kind of offset can also help with big brake kits (depending on the wheels center design). And some get more extreme offsets as well so they can have a bigger lip width.
I have 19x8.5, w/ a 31mm offset and 235/35-19 tires all around, on quattro. No problems or rubbing issues. (The wheel manufacturer used to offer 35mm & 38mm, but for some reason changed it to 31mm). Some had said this offset was not good, while others said it was fine. Sometimes, it depends more on what you want. Some poeple do not like their wheels pushed out so much.
Also, before I installed H&R Coil Overs, my front wheels were pushed slightly out past the fender. But when it was lowered, it tucked inward slightly (about even with fender). The rear is fine and can accomodate a wider wheel (but on quattro, a staggered set up is not recommended).
My next wheels will have a 32mm offset most likely.
