If I adjust my coilovers on a couple of corners by maybe 1/8" would this throw off my alignment at all. I'm slightly rubbing the odd time I go over a dip in the road and it's driving me nuts. I want to bring it up a bit but was just wondering if this would result in needing another alignment.

such a slight change should screw up your allignment enough to notice.
