Who has the best 18" RS4 replica wheel?
Hartmann has these:
B7 RS4 - 332, cast
Wheel Sizes Offset Price Fits B5 S4 Stock Level

Is hypersilver closer to the authentic RS4 wheel or is gunmetal more like it?
Hartmans are 8" wide and purems is 8.5" wide.
Aren't stock S line wheels 8.5" wide?

Well since no one bothered to reply, I'll give it a shot...
The oem S-Line wheels are 18x8 with ET43 offset.
It's difficult to say who has better quality wheels, but from what what I hear, quality-wise, both Hartmann and Velocity (the ones that PureMS carries I believe) wheels are very good. I've personally looked at Hartmann RS4 reps up-close and the quality was great (about on par with quality of my BBS wheels).
I believe that ideally the replica wheels should be 8.5" wide with a more aggressive offset of ET35 or even ET32.
Here are some pics of my 18x8.5 wheels with ET35 utilizing 235/40/18 (oem size) rubber.

As you can see the wheels sit flush with fender giving you a more aggressive stance (B6 and B7 fenders are the same)
Out of the Hartmann wheels, I would go with the wheel that has a more agressive ET35 offset and that clears the B5 S4 (HP2) calipers (in case you ever want to upgrade to a BBK).
Be aware however that even though the offset of the hartmanns is agressive at ET35, the wheels will look more tucked in just because of the 0.5" difference in wheel width (I had my car parked right beside a B6 with Hartmann RS4 reps and the stance was not as aggressive as my setup).
The PureMS wheels might look better since they are 8.5" in width, but their offset is a bit milder at ET38. Because the wheel is wider, it might compensate for the difference in offset and it will look more aggressive than the Hartmann wheel.
Keep in mind that Hartmann wheels are made in Italy while PureMS (Velocity) wheels are made in Taiwan. This isn't really an indication of the quality, but to some it might be important.
I think "gunmetal" is perhaps a better match to the oem RS4 wheels.
