South Bend makes a superb product, going in my personal car very soon as well. Lasting and very capable products with excellent support:

get an estimate and pay the difference between the stocker and the SB parts. They should cover the labor regardless.

I've messed with southbends and seen all kinds of other ones used and my opinion is DO NOT use one unless you have to. I never had the same driveability and their torque handling ratings were incredibly overstated. I could routinely overpower my clutch that supposedly held 500tq on a car with a k04 (b6 a4). ON my B7 I never had problems holding my k04 power so I would have replaced it with an OEM one. Same as with my S4 now. IF you search Southbend, Spec, Clutchmasters, etc you'll find a bunch of people happy with them AND just as many with anything from small complaints to all out failures. I'd rather go with OEM as long as i can get away with it.

however I am going to interject a bit here. Ultimately, anything you read on forums has to be taken with a grain of salt, surely you know that. Considering all of the years I spent on the forums, many well before my tenure at Avalon, I entrusted in what many people said on the boards. After being on this side I actually speak with these same people on a regular basis and there is irony galore. I now hear the horror stories behind the installs, flywheel tolerances, improper break in etc, and find myself in awe.
Ok, so as far as clutches go SB =/= Spec =/= clutch masters =/= OEM. We'd probably both be fools to say that the clamp load, heat tolerances and durability of the friction material on a SB, for instance, would not be greater [higher] than those of an OEM set up. IMO, this clutch desperately needs more pedal pressure and clamp load, but that's certainly subjective.
I can appreciate your perspective but we should probably try to stay on level ground. If you compare the number of OE clutch failures vs those of aftermarket set-ups, doubt they will even be close. Agree?

I concluded that the OEM clutch setup was the way to go to maintain driveability. It's also plenty strong for about any setup anyone is running in a B7 right now.
My car was about as powerful as you could build without going to a huge turbo and I never had any problem with slippage.
Going with a racing clutch will sacrifice driveability.
