Does Homelink work with rolling code openers? My Opener just died and I need to get a new one.

You can usually teach it backward as well...
That is, teach the garage door opener your cars code. I did this by mistake once. The only problem is, my car was the only one that would open the door. Not so good with a double car door, but works fine if it is a single car door.

Correct.
There is a signal that your car will send out that isn't related to the garage door opener. This signal can be "learned" by the opener (opposite of what you normally would do) and added to the accepted signals to open the door. This was the way that I had to do it because of the rolling code issue (stated in the garage door manual).

Oops, read that too fast. Rolling code openers work just fine.
Not familiar with 05.5A4quattro's procedure though...I think my manual says to use a transmitter to program the car with, even for rolling codes.

that makes no sense, though I *think* I know what you're trying to say...
there are two steps to programming a rolling code opener
1) programming a button on the visor to your handheld remote transmitter
2) pushing the "learn" button on the opener itself and then finalizing the process by pushing the button on your visor.

Unless it has changed, it should work like this...
First you teach your car from the rolling code remote.
Then you teach the garage door opener from the no-longer-rolling code stored in your car.
At least that's how it's worked for my last four cars with Homelink.
