compared to stock, cause an incorrect measurement, the resulting mpg calcs by the IC are very optimistic.

Long term computer is almost spot on when compared to the calculations. I've gotten more than 520 miles to a single tank and the gas light had just come on. (32.9mpg)
That whole trip was 1800 miles on 3.25 tanks of fuel. I had set the cruise at 75mph and I did quite a bit of city driving in the middle of the trip too. (~34mpg)
37MPG is possible if you get on a highway and drive 55-65 mph.

I find the averages are pretty darn accurate. I check just about every tank by hand. (Miles divided by gallons used.)
Just last weekend I got 36.7 mpg on the trip from Hershey Pa to Washington DC and that was a short trip.
Even with all the city driving once I got there I still averaged about 29 mpg for the whole tank. I had 450 miles, and the car took 15.6 gallons of fuel when I filled up.

Even then I'd think the road would have to be quite flat.
I base all my calculations over one tankful. Best I have managed to muster is 25mpg average for a tank and this was at an avereage speed of 43MPH, so not completely highway. I average around 22mpg per tank commuting 50/50. This is dead on with the EPA 2008 ratings.

So I'll take pictures of the trip display next time I'm visit my sister in Ann Arbor Mi. Hell, I'll even take pictures of the gas receipt and mileage display so that you can do the math yourselves. It won't be quite 37mpg, since I'll be averaging 70-75 mph (and through the Application Mountains) but it will be damn close. Certainly enough to prove my point.
The EPA ratings are attained using obsolete methods... and they don't reflect what a car is capable of, but rather what most people might expect to see. It's not that far fetched to believe 37mpg is possible from a high tech 4-cylinder engine.
Many other factors are also in play like how much ethanol is in your fuel, your tranny type, traffic, and of course your right foot.
