I just checked and here's what I found: if you press the ESC button once and release, the DIS states the "ESC is Off". If instead, you press and hold the button for about 5 seconds, the DIS message in addition will also state "Brake Guard Off". I'm not sure if this is the same as ASR or just the Auto Braking Guard feature (which can be turned off as an option in the MMI). In any case, holding the button down for a few seconds turns off two of the control systems. Turning the car off resets both back on for the next restart.

In my new 2014 (MMI 726), pressing and holding the ESC button only does the first stage ("ESC is Off"). Holding the button down has no additional effect.

I think the second "off" feature is only for cars with adaptive cruise.

When I press the traction button in my 2014 TDI, the display reads "Stabilization control (ESC): Sport Warning! Reduced stability" and I played around with this in the snow...

Actually, that's correct although mine also says "Braking Guard Off". My A6 is optioned with Presense Plus which includes that feature. My '09 A4 had the double press feature but apparently, not the current C7 A6.
