Our first run with the video setup was a 6 hour drive to Boston, and back (well 5 but who's counting).
It worked great. My kids watched movies both from the iPad memory and from the Seagate GoFlex.
It worked flawlessly, my older son was streaming movies on his iPad up front, while the two younger son's watched movies in the back seat on a second iPad shown here.
The GripDaddy holder works well (Fell out once as the lock nut became loose, cranked it down).
One caveat, if you PAUSE from the MMI, it will remain paused and trying to start a new video from the seagate will make you think there is a problem, messed around for 10 minutes before recalling that I paused the thing from the MMI and it worked fine. You can pause, fast forward, rewind, skip to next movie, from the MMI, which is handy. The bluetooth streaming and control works great.

I got mine today and must say I'm impressed. Copied a few M4V movies (Handbrake universal profile) onto it and my MMI (sw 0566) as well as the iPad where able to play them. The Internet pass-through is a nice feature too (even though not that usable because I'm on AT&T 2G).
While the Seagate application lacks the look and feel of the Plex client it seems to be a robust solution. Other than the Plex server in the trunk I don't recommend leaving it plugged in all the time though. The battery in the GoFlex may not like hot summer temperatures very much.
