Whenever I am driving forward into something and I want the sensors and camera, I hit the P button and up they come.
I would very much like reverse to work the same way. In other words, I don't want the reverse camera coming on unless I hit that P button.
Does anyone know if there is a way to effect that via VCDS (Vag-comm)?

In the MMI set up under "Car", you can disable the automatic camera on, and screen pop up when in reverse.
