I think you answered your own question. Everyone will have different opinions and needs. me, I like a fast, sporty car so I opted for the 3.0T, but if fuel economy, etc is more important to you, go with what makes you happy

I have a 2.0T CVT.
I test drove the 3.0T. It was fast, powerful and effortless. Will easily get you over supra-legal speeds. But it was also relatively quiet, muted and smooth, so it didn't give me the sensation of speed.
My 2.0T at full throttle is loud and raucous, and actually I find this gives more sensation of speed. Sometimes I like to pop it in manual shift mode and rev the **** out of it just to hear it roar. Also with the turbocharger, you get a big shove of torque down low around 1,500 rpm, and I find this also gives more sense of acceleration.
But 99% of the time when I am driving in my usual relaxed manner around town and on the highways, the engine stays around 1,500-2000 rpm, where it has abundant torque and is also very quiet and smooth.
With the CVT I get very good gas mileage around 25 city/31 highway, and I'm becoming more and more amazed at how smooth it is. The other day I drove someone else's conventional auto and it almost caught me by surprise to feel a gear shift.
