2.7 T A-6 Turbo replacement
Is there any way to replace both turbos on a 2000 A-6 without removing the engine?
If not, how difficult is the engine removal on this model ?

When I bought my first (of 5) A6 2.7T car, it was recommended to me to use only Mobil 1 oil, since it was better for the turbochargers. The mechanic said, "You don't want to have to replace the turbos, you have to pull the engine to do so." I believed him then and I believe him now.
I would plan on at least 20 hours to remove and replace the turbos, including pulling the engine.

My engine was burning a ton of oil and the oil seals on the turbos were the problem. I had plenty of power, just needed to add a qt. of oil every 2 tanks of fuel. To get to the turbos, ya have to pull the engine...sorry for the bad news

Since you already have to change the turbos, are there any garet or aftermarket turbos what offer a slight HP raise? + chip tuning, for just about 20-30hp (not peak)

I'm wondering if the high mileage engine could handle any increase in horsepower.
This is one of 3 toys that I have and I'm having difficulty convincing my wife that I need to spend thousands on this high mileage car, even though I love it. I just can't part with my toys even when they get old.

I would consider looking for another A6 2.7 before I paid to have the motor pulled. There are a lot of theses cars available and the cost is getting cheaper by the day. Granted most will be well worn and need to be passed but there are some low mileage ones and there are well cared for ones if you look. If you are a DIY and willing to take on this extensive a job then that is something else. You know the condition of your Audi.

Make sure that it's not just valve cover gaskets and cam seals. If you're just adding oil without tons of smoke at exhaust, you might get lucky and not have to pull the engine.
If engine is OK otherwise, K04 turbos and chipping are good ideas. You get more like 50-70 peak hp and a big torque increase especially at lower RPM. I have an 01 with 250k miles that's been chipped since 75k miles. Very quick and better mileage as well. Better with manual trans as tip trans is weak link on chipped cars.

I have an 02 with 150K no major issues although i am doing some upgrades and curious is yours auto? I wanted to do the 6 speed swap i want to use K04 Turbos I've heard there can be a fitment issue?
