My wife drives a 2003 A6 Avant 3.0L -- friend has some lightly used 255/40R17 Toyo RA1s for sale. Any idea if these will fit under the fenders given the right wheel choice? If so what wheel do you run?

if your wife's 3.0 is stock ride height, you should be okay.
GBW tried on a set of forged wheels with 255 40 17 rubber, and there was rubbing...however, his car has been lowered with the Eiback Pro-Kit.
I do not think there will be any rubbing issues on suspension components or other. Can anyone else confirm?

and it was ENTIRELY inconclusive. You had some people insisting that there were no problems, others stating first hand experience that even 245 caused problems. Officially, TireRack does not recommend anything wider than 235.
Even those people working with a higher offset (e.g., 4.2 sport forged wheels) went both ways on this question.

..... on either the inside of the wheel towards the upper control arm, nor could the wheel be pushed out any further.
255s should work on the wide-bodies.

but good point, on ET45 wheels (stock) I doubt this would work.

I don't think I'd want to be running R-compounds on the street. They won't last long.
If you are thinking track, you'll want about a 9 inch wide wheel to support that tire correctly.
