Default 6 spd gear box: how to fill with right amount of oil?

Today, I drained a quart of gear oil out of my 2002 6 spd (2.7T).
Put a hose into the 'fill plug' (driver side, halfway up) and tried to get a quart of oil in, but started to drain out after maybe 2/3 quarts.

Can someone link me to the proper procedure?

If the oil spills out the fill plug, you have overfilled. The trans oil should be 7mm below the level of the plug. I use a small allen wrench as a "dipstick." Also, the car should be level when filling and measuring the oil level.
