How do you lift the cams out? I removed the cam caps on the passenger side and the front of the cams are lifting up from the valve spring pressure. This upward cant is making it impossible to lift the rear up where the cam tensioner assembly is. Do you cinch down the front cam caps and work the back of the cams up and then loosen the cam caps a bit and repeat?

I could not find the engine block coolant drain plug. I see several allen bolts on the driver's side, I removed one but no coolant came out. Plenty came out when I pulled the water pump though.

No. There are three cam seals in front, two on bank one and one on bank two. The fourth seal is on the rear of bank two. It makes no sense to do only two no matter how you look at it.

Regarding the coolant drain on the rear of the block...don't bother with it...it's hard to get out, and when I took mine out, no coolent came out. Assuming you don't have the car jacked up too high, you'll get the lion's share of coolent out of the front of the engine, when you disconnect the coolent hoses. This was verified later, when I was replacing the coolent, it took the full, listed volume of coolent...
