??? Aren't there a couple of big mounting bolts for the caliper? HP2 you just take off the entire caliper.
Think bigger bolts somewhat away from the caliper.

I am surprised, but you are right. They give no indication of how to remove the HP2 caliper and/or replace the rotors. They also give no indication that its on the 2.7 or S6 - only allroad. Why am i not surprised?
Anyway, the caliper guide pins have nothing to do with caliper frame removal. There will be two bolts, usually 7, 8 or 10mm allen, that attached the entire caliper to a caliper (and often pad) carrier - which in turn bolts to the hub. They will be on the back, in toward the hub itself if they are like every other caliper (including many audis) i've worked on.
